Thai kickboxing - Learn "Lanna Muay Thai" – the sport of northern-Thai-style kickboxing. The lessons are challenging, the workout fun and the memories are unforgettable. Cooking School - The cooking school introduces guests, both novice and experienced cooks, to the art of Thai cuisine. Designed by the Resort's culinary team, the programme offers guests a hands-on learning experience. Famous dishes such as kaow soi gai (Chiang Mai curry noodle soup with chicken) and gaeng hung lay (dry spiced curry with pork and pickled garlic) are just two of the specialties that are introduced in the cooking school’s weekly programme.
Designed by the award-winning Bensley Design Studios in Bangkok, the Resort's lanna-style cooking facility celebrates northern architecture and traditional design. An imposing stone staircase leads guests into the demonstration, dining and retail pavilions, which complement the Resort's distinctive design.
The demonstration pavilion, with rich timber floors, large overhead zinc exhaust fans and huge sliding glass doors, is air-conditioned. It features a large cooking area for the chef, eight individual cooking stations suitable for one or two people, and a large teak working table and chairs that can accommodate all participants. Culture Centre - The resorts arts and crafts village, 'Ban Sam Lang', offers highly informative exploration of the ancient Lanna culture including hands on craft demonstrations, a variety of lectures and an enlightening tour. Dedicated to the preservation of the Lanna culture each month they perform a traditional ceremony. From here they offer a variety of activities so their guests can explore the ancient Lanna culture. These include every facet of life from celebrations to rice cycles. 'Ban Sam Lang' is made up of a group of three traditional northern Thai style houses brought here from villages in the surrounding countryside.
Guests can view demonstrations of traditional rice pounding and weaving and try their hand at the crafts. Enrichment classes include 'Traditional Thai Flower Arrangement' or 'Northern Thai Dance and Music'. Guests can participate in daily rituals, such as the offering of rice to Buddhist monks on their morning alms rounds. Fujian - Styled as a 1930s Shanghai mansion and offering fine regional Chinese cuisine. The dim sum lunch is renowned throughout Chiang Mai. Set over two floors with a spacious veranda overlooking the traditional Kad Dhara Shopping Village and private dining available for 2 to 50 guests. Fujian has a rich atmosphere decorated in a prosperous style with many rare pieces from the resorts art and antiques collection.
The cuisine also meets the finest tastes. The evening menu lists a variety of Chinese regional cooking styles from classic Cantonese to the more spicy cuisine from Sichuan province with many contemporary innovations. In keeping with the Chinese ‘family style’ meal, portions are served individually on the finest bone china. Fujian takes its name from the prosperous Chinese province which is famous for its black tea. Le Grand Lanna - Welcome to the fine experience of dining in a Lanna nobleman's home. Sit beneath rain trees on the terrace or in one of three private pavilions. The resort has created a traditional setting to showcase classic Thai and northern Lanna style cuisine. Go Heritage - Wiang Kum Kam (WKK) was established by King Meng Rai, the King of Yo Nok, as the first Lanna capital. WKK had not lasted for long because severe flooding at the time caused the city to sink. This made WKK an underground city before the ancient Lanna Kingdom was destroyed.
